Bryant Blueberry Spinach Salad
Dressing Ingredients
1/2 cup vegetable oil
1/4 cup raspberry vinegar
2 tsp dijon mustard
1 tsp sugar
1/2 tsp salt
Salad Ingredients
10 ounces fresh spinach, torn
4 ounces blue cheese, crumbled
1 cup fresh Bryant Blueberries
3/4 cup pecans, chopped and toasted
Combine
Place into a jar with tight-fitting lid, and shake
to combine the vegetable oil, raspberry vinegar,
dijon mustard, sugar and salt.
Toss
Fresh spinach, blue cheese,
fresh Bryant Blueberries and pecans.
Add
Dressing to salad and toss gently; serve immediately.
Yields 6–8 servings.
